IQF ORANGE JULIENNE CUT
Orange Julienne cut, is a French cooking term for thin strips. The strips are usually about 3 inches long and 1/16- to 1/8-inch thick. Made by a culinary knife cut in which the orange peel is cut into long thin strips, similar to matchsticks.

A quick, simple way to add zest, literally and figuratively, to such fall dishes as roast duck, stews and casseroles is by adding julienne of orange rind - also known as orange zest. Zests also can be candied by cooking them briefly in white-sugar syrup.
